I haven't been posting any breads lately but it is because I always bake the same type of bread.  The only thing I change is the flours I put.  The rest is the same:  sourdough, water, flour, salt and seeds.  The process is also the same.  I mix  (no knead) all ingredients in the morning before going to work, and put the dough in the loaf tin and let it cover until I arrived home.  Then I bake it and that's everything.  I go to work at 7 a.m and I am probably baking it at around 4 p.m.  Now that is warmer what I do is put less sourdough.  So this time I put like two o three tablespoons of sourdough (cold sourdough just from the fridge) for 600 gr of flour and 430 gr water.  For me is the best way to make bread as it is really easy and as fast as it gets.

This morning, when I woke up I felt like baking a cake.  It is being a long time since I baked a cake.  I've baked a banana bread (or cake).  I followed Donna Hay's recipe from her book "Fresh, fast and simple" is the Banaba pudding.  It is really easy.  I changed a few things from her recipe:  I put olive oil instead of butter (I didn't want to be bother with melting butter) and less sugar.  In the end the ingredients were:  3 eggs, 100 gr olive oil, 200 gr sugar (50 white sugar and 150 brown sugar), 2 bananas (smashed), cinnamon, 300 gr flour and a tablespoon of baking powder.  Oven at 170º C for about an hour.  I almost forgot to mention that I put some chocolate bits that I found I had.

I have already had some because I have to cut half for the family ; ).  It taste really good.  I will probably freeze some because it is a very big cake.
